Hot Honey Halloumi and Mint Tacos
Ingredients
250 g Halloumi
8 Mini tortillas
2 Avocados
60 g Rocket
50g Pomegranate seeds
1 Heaped teaspoon Harissa
3 Tbs Little Bees Larder Chilli Honey or Chilli Sauce
175g Greek yogurt
10 g Mint (chopped)
Slice the avocados, mash them in a bowl and set aside.
Mix Greek yogurt with chopped mint for the mint yogurt sauce.
Slice the halloumi and coat in Chilli honey and harissa.
Fry halloumi slices on both sides until caramelized.
Warm the tortillas in a dry pan.
Assemble tacos by layering avocado, rocket, halloumi, mint yogurt, and pomegranate seeds.
